XBOX....at 2:00AM!!!

I had one of the worst nights last night and it was my first weekend back to work!
I know I can't be the only tired wife out there...because my husband was playing XBOX till 2 in the morning with other dental school friends.
Well, Taylor had been sleeping through the night this whole week and was on a roll. But for some reason...she wasn't tired and wouldn't go to sleep Friday night...so Tyson was thoughtful and said...put her in the swing and go to bed. I will watch her. She sleeps easily in the swing. However, it is a bad habit to put her in because then she won't sleep in her crib. I woke up at 2 in the morning....to find this:



...With what I saw, you could imagine that I wasn't the happiest wife out there...So I took Taylor and put her in her crib. She was totally out of routine and everything went downhill from there. She woke up immediately as I put her in the crib...so I fed her, changed her diaper and swaddled her...but she still wouldn't go to bed. So I told Tyson... "I have to work in the morning...you have 5 minutes to get off the XBOX and try to put Taylor to bed" I am so mean... Well, he got off quickly and tried to put Taylor to bed...poor guy...nothing was working, so I went in her room (I couldn't help myself) and gave him some tips that I've found to help. I eventually woke up and he was sleeping in our guest bed next to the crib... It was so cute. I told him to come back in our bed. We were both so tired this morning and had a long nap with Taylor when I got home from work. To sum it all up...I went to bed close to midnight, woke up at 2am, 4am, and then 6am to go to work. What a night! Sometimes I just wish I could be the one playing XBOX and have no worries...

Nauvoo & Carthage

This is where Joseph Smith, our beloved first prophet of the Church of Jesus Christ of Latter Day Saints, was martyred. Tyson told me that when he came here with his family when he was 12 yrs old...it was in that very room that he new of the truthfulness of this church. The spirit was so strong and bore that witness to him. He really enjoyed revisiting this room and feeling the special spirit here at Carthage Jail.

We took a really quick weekend trip with my nieces and nephews to Nauvoo and Carthage, IL to explore a little church history. I don't think I will ever drive 8 hours with Taylor in the car AGAIN! Ahhh! It wasn't that bad, but the last 3 hours was awful and I have to sadly admit, I took Taylor out of her carseat through a slow construction site because she was crying so bad and had been fed and diaper changed. She just needed to stretch out. It made me so mad that I did that...when I swore I would NEVER do that EVER!!! From now on...I am just not going on an 8 hour straight drive with her!

Mandi started playing Boo with Taylor and all of a sudden a laugh comes out! I had never heard her laugh, so I had to catch it on video! Prior to this, Taylor had never reacted to the "Peek-a-Boo" Game. She must love her Aunt Mandi!

My favorite recipes

Creamy Chicken Enchiladas
3+ large skinless/boneless chicken breasts
1/2 onion, chopped
1/4 cube butter
1, 8oz pkg cream cheese
1 small can green chilis
flour tortillas
1 pint whip cream
1 cup monterey jack cheese

Preheat oven at 350 degrees. Boil chicken and cut up 2-3 chicken breasts. (Can do this the day before and refrigerate). Saute onion in butter. Add 1 pkg cream cheese and 1 small can green chilis. After cream cheese melts, mix in chicken. Drop chicken/cheese mix in flour tortillas. Put in 13x9 pan. Pour pint of whipping cream on top. Add 1 cup shredded monterey jack cheese. Bake 30 minutes at 350 degrees.
Great to top off with the black bean salsa dip!





German Pancakes
These were a household family favorite! Every time we had a special holiday, we would be woken up in the morning by the fire/smoke alarm going off in our house because to bake this, the oven has to be at 500 or 550 degrees. My mom's oven was old, so for some reason it always set off the alarm. When I make them, it doesn't set off our smoke alarm...so no worries :) You would think that being woken up by a loud obnoxious alarm would be horrific, but in our house growing up...it was wonderfully exciting :)

Mom's German Pancakes (Mom Gubler)
1/2 cup margarine (melt in pan)

Batter:
2 cups milk
2 cups flour
6 eggs
1 tbls cinnamon
1 tbls vanilla

Topping:
1 lemon (juiced)
powdered sugar
syrup

Preheat oven to 500 or 550 degrees (whatever is the highest). Melt margarine in pan (in oven). Mix ingredients in bowl for 2 good minutes. Poor batter into pan with melted margarine. Bake for 15-20 minutes. Will rise very high, then fall. When done, spread 1 lemon (juice) over the batter and powdered sugar to taste. let cool 5 minutes. Enjoy with maple syrup, if prefer.




Chicken Cordon Bleu
(Very easy and really good)
Boneless/skinless chicken (don't remove all fat)
Primrose sliced ham (rectangle/good quality)
Mild cheddar cheese block, cut into thick blocks
Toothpicks

Sauce/Topping:
1, 1/2 cup sour cream
1 can of cr mush soup
1 can drained mushroom
1 tsp lemon pepper

Preheat oven to 350 degrees. Layer ham onto flattened chicken. Roll cheese in it and seal with toothpicks. Smother with creamy sauce. Bake 45 min to 1 hour for chicken in 9x13 pan.
The sauce is a family favorite! We usually make a little extra and heat it up on the stove. We like to put it over some rice or a baked potato with the chicken!
Don't forget to remove the toothpicks before indulging!

Banana chocolate chip Bread: (recipe already doubled)
2 cups sugar
1 cups butter, melted
4 eggs
1 cup sour cream mixed in with 2 dashes of salt (set aside and let rise)
5 banana's (if frozen...let thaw)
4 cups flour (added one cup at a time)
Add choc chips to your taste

Preheat oven to 325 and bake for 1 hour for a large loaf and 35-40minutes for small loaves
(test with toothpick in middle)

Makes 4 medium and almost 1 large loaf
OR 4 medium and 8 tiny loaves


(My mother always taught me to put my old banana's in the freezer and when they added up to 5, to make some banana bread. It sounds and looks SUPER NASTY, but they work just the same and even makes the bread more moist.)





Fruit Pizza
I love to get creative and decorate with this one! You can throw the fruit on or you can make it pretty.

For a round pie pan:
Use, 1, 1/2 sugar cookie dough packages
Bake at 350 for 9-10 minutes
Enjoy the other 1/2 of the cookie dough or make small sugar cookies :)

You also need all types of desired fruit (different colors)

Cream cheese topping:
1 lb cool whip
2, 8oz phil cr cheese
1, 2 lb powdered sugar
2 tsp cinnamon
2 tbsp vanilla
2 tbsp fresh lemon juice

The key to this one is to let crust cool out of the oven then put cream cheese over it and let sit for at least 4+ hours (or overnight covered with Saran Wrap and placed in the fridge). This makes the crust very soft and perfect...even if you over bake the crust. This is always a huge hit at big get-togethers.

It was so hard, but it had to go. We had to cut off Taylor's mullet. Now I can put it in her baby book.
We're not sure when we are going to cut her mohawk, though.

Rolling over and Talking





This is Taylor's first time rolling over, since the time she did it in May at Grandma Gubler's house.
I am surprised every day/minute at what Taylor is coming up with next. She is developing so fast and is so fun.
This morning I was laying down with her, showing her how to roll over as I rolled back and forth in front of her, talking to her. Then this afternoon, I set her down in her activity gym mat for a minute and when I came down stairs, I found her rolled over (almost completely). It is crazy how we get so excited over simple things...and before I know it, that will be nothing...she'll be taken off crawling eventually.
It seems like everything happened today, though! She grabbed a toy and held on to it, she is holding her baby keys and shaking her rattle. Today was the first time she was interested in a baby book, touching it and wanting to help turn pages (or so it looked like). We just had a very fun, interactive day today. And when 'daddy' came home, we showed him.

Taylor Babbling-3 months old

A/C cost $550

Our Air Conditioning unit went out AGAIN and so the guy had to come back to see what the problem was. Well, our a/c went through 2 lbs of freon in just 2 days. So, there was definitely a problem. He went up in the attic to take a look at our furnace and it had a huge leak and was spurting out fluid...so they had to order a part for it and will be replacing the acoil. Well, thankfully it is under warranty; HOWEVER, the labor will cost us $550. Good thing I will be working this Saturday to help pay for this :-)

Courier Journal HELP

I want to subscribe to the Sunday local paper, and I heard that it is $5/month, but when I called (502)585-1763, they told me that it was $9.88/month. I am under the impression that there is a promotion once in a while for the $5/month for one year deal. Does anyone know when that deal is or if there is a code I can use to get that price? I am going to start coupon clipping! YEAH! FUN! :)

A/C is working!

YAH! Our air conditioning is fixed. What I found out was that it was out of freon... which means that it has a leak because it shouldn't be out of freon for at least 9 years (says the guy who fixed it). So, we have to call the people that installed it and it should be covered under warranty and have them fix the leak. He says that the leak probably is really really small and they may have to use nitrous? to find it. Well... overall... everything cost us $132. So expensive just to put freon in. The visit itself is about $80-90. I'm hoping that the company will reimburse me when I show them the invoice. I hope you all have a "COOL" summer!

NO A/C




You know how I told you about how our AC was broken?! Well, it looked like it froze over and so we had to turn it off for it to defrost overnight. It was the hottest night. The humidity is what kills us! We had fans running and windows open, but when we came home from church to cook dinner, we were dying with the oven going too. I was sweating up a storm. We turned the AC on, but it didn't do anything, so we are going to have to get someone to come out and look at it first thing Monday. Hopefully its not that expensive. I'll keep you "posted".

My oldest brother, Chad, and his wife and their 7 kids are on a church history trip/tour. They are driving all around looking at sites and will be here in Louisville about a week. It is so fun to be with everyone and have them here! The first night they were here, our AC went out and so we all went outside to light off fireworks and cool off till midnight. Our neighbors probably were cursing our names, but they've had plenty of late night partys, so I didn't feel too bad :) Their youngest is almost 2 yrs old and loves to get naked (as you can see in the picture of the family). So, I had to get a pic of Taylor and Carson in their diapers this morning. They're so cute!
